Having 6 cookies around means that there are few enough that I will want to postpone eating them to have them around a little longer...and to not feel terribly guilty if i've consumed the whole batch over a couple of nights. :)<BR/><BR/>I recently adapted this recipe as follows:<BR/>I substituted grated jaggery for the brown sugar and halved (i would recommend eliminating) the white sugar. The jaggery I used was Rani brand Gur balls, which i believe is softer than regular gur and melts more easily (I think its meant for chikki and other sweets which call for molten gur). I started by microwaving the gur and some of the butter for about 45 seconds....stirring the molten gur and butter and followed the rest of your instructions. Chocolate chips replaced by honey roasted peanuts and orange flavoured cranberries. Absolutely delicious!!<BR/><BR/>This recipe wins all the points for perfect texture in cookies...the perfect balance between chewy and crisp (both in your version and my gur one).
